What other strategies would be a good fit for your company profile?

Deborah enters your office, and you notice that she looks apprehensive. “Hi, Deborah. What’s up?” you ask, hoping that nothing is wrong.

“Well, your team is doing an excellent job researching, and you’ve been keeping me up-to-date on your findings. My concern is that we are approaching this from a narrow-minded approach.”

“How so?” You ask. You are puzzled. “Our team has been looking at every aspect of the company and considering both internal and external pros and cons.”

“Have you considered partnerships or an acquisition or other options for expanding our brand?” Deborah asks. “I didn’t see that as an option in any of your reports. I think you really need to cover our bases here. Please report back to me next week with more options.”

You decide that Deborah has brought up another good point that should have been discussed in the beginning of the project. You make a note to add this to a list of project management ideas to help make future projects go smoother.

Assignment 1: Essay

Due Week 4 and worth 100 points

Choose one (1) of the three (3) reading selections from the list of topic choices below. The focus is on brief but important primary source material written by major authors. Read the selections  as identified with each topic below. Write a three to four (3-4) paragraph essay (250 words minimum) which analyzes the “surprise ending” of the reading selection.

Topic Choices

  • Reading selection from Descartes’ Discourse on the Method (Part IV). Descartes begins with a  proof of one basic conclusion and ends with a proof of something much grander. Remember to focus on the surprise and point of realization, not the details of the philosophical argument. Read Part IV of the Discourse on the Method located at http://www.earlymoderntexts.com/assets/pdfs/descartes1637.pdf (then scroll down to Part 4, pp. 14-18). This is only four or five (4 or 5) pages of the larger work.
  • Reading selection of Swift’s A Modest Proposal. It is essential to recognize the genre of this work, as discussed in our class text, which you should consult and cite. Swift promotes a radical solution, but subtle options are mentioned. You are looking for surprise and a point of realization. Read and focus on A Modest Proposal located at http://www.victorianweb.org/previctorian/swift/modest.html.
  • Two (2) reading selections from Voltaire’s Candide. Consider how these readings start and end in terms of the action and the beliefs. You are looking for surprise and a point of realization. These selections can be found on pp. 840-841 in the textbook. In addition, consult the class text at pp. 824-825.

For the reading selection you choose:

  1. Clearly state in your own words the “surprise ending” in the reading you selected. Clearly identify the point in the reading when you realized that there were elements in the reading that surprised you. Not all of the surprises come at the end.
  2. Evaluate how successful the author was in convincing you to accept the validity of the “surprise ending” that was different from what you expected.

Your assignment must follow these formatting requirements:

  • Be typed, double spaced, using Times New Roman font (size 12), with one-inch margins on all sides; citations and references must follow APA Style format. Check with your professor for any additional instructions. (Note: Students can find APA style materials located in the Additional Resources section of their Student Center within their course shell for reference)
  • Include a cover page containing the title of the assignment, the student’s name, the professor’s name, the course title, and the date. The cover page and the reference page are not included in the required assignment page length.
  • Use the source(s) identified above for the topic you choose, focusing on the main primary source of that author. You may use additional sources also if they are of good academic quality for college papers (Wikipedia and similar websites do not qualify). Use proper APA style in-text citing and also a matching APA style References list at the end.

The specific course learning outcomes associated with this assignment are:

  • Explain how key social, cultural, and artistic contributions contribute to historical changes.
  • Explain the importance of situating a society’s cultural and artistic expressions within a historical context.
  • Examine the influences of intellectual, religious, political, and socio-economic forces on social, cultural, and artistic expressions.
  • Identify major historical developments in world cultures from the Renaissance to the contemporary period.
  • Use technology and information resources to research issues in the study of world cultures.
  • Write clearly and concisely about world cultures using proper writing mechanics.

Grading for this assignment will be based on answer quality, logic/organization of the paper, and language and

What is the effect on the overall food cost of the operation when over-portioning occurs?

For numbers less than one (1.0), please express as 0.76, not .76
Maintaining your intermediate calculations extend to three places to the right of the decimal point (for example, 0.458)
Show final answers as two-decimal-place numbers (for example, 1.24 or 0.53)
When rounding, round the number 5 up (for example, 2.485 = 2.49)

Complete the recipe cost sheet and calculate the Cost per Portion for the burger and the total recipe cost.

Recipe Name: RKR Burger Cost per Portion: ________________
Yield / Portions: 8
AP EP Total
Recipe As Purchased Edible Portion Ingredient
Ingredient Amount U/M Cost per Unit Yield Cost per Unit Cost
Beef, ground patties (2:1) 8 each 0.960 100.0% ___________ __________
Buns, hamburger 8 each 0.350 100.0% ___________ __________
Lettuce, iceberg, chopped 16 oz 0.042 73.1% ___________ __________
Tomatoes, 5×6 2 ea 0.747 100.0% ___________ __________
Onion, sweet, diced 12 oz 0.069 90.6% ___________ __________
Butter, melted 4 fl oz 0.151 100.0% ___________ __________

Total Recipe Cost: __________
Notes:
For beef, “2:1” means 2 patties per pound or each patty weighed 8 ounces.

What if we purchase beef patties by the pound?

Beef, ground patties (2:1) 8 each 1.92/# 100.0% ___________ __________
What if we purchase onions by the pound?

Onion, sweet, diced 12 oz $27.60/25# 90.6% ___________ __________
Each tomato produces 4 slices, so 2 tomatoes will yield 8 slices or one per plate.

If the above burger is served with a side of French fries ($0.49 per portion), a side of chipotle mayonnaise ($0.06 per portion), and a side of ketchup ($0.07 per portion), and the plate’s menu price is $6.95, what is the theoretical food cost for this plate when expressed as a percentage?

A restaurant purchases prime rib roasts with the following specification: Prime, certified Angus beef, boneless, lip on rib eye. With boneless, lip-on rib eye, no trimming is required prior to cooking. The average invoice weight is 11-14 pounds per roast at a cost of $9.59 per pound. Each rib is delivered in a Cry-o-Vac package (vacuum sealed, captures juice draining from the meat, but the juice is still weighed when the package is placed on a scale). You have the following information about the preparation of the roast and sale of the product:

Weight
Package and invoice weight (AP) 12#, 10 oz.
Rib weight following cleaning 12#, 8 oz.
Weight after cooking (salable weight or EP) 11#, 12 oz.
Non-usable trim at the end of the shift 8 oz.
Usable rib at the end of the shift 0 (None)

Sales from the point of sales system:
4 each King cuts (20 ounce portions) @ $22.95
4 each Knight cuts (16 ounce portions) @ $19.95
2 Squire cuts (12 ounce portions) @ $15.95

If we operate in a flawless fashion, we would still have weight loss during the cleaning and cooking process. However, we would cut every portion exactly at the stated menu portion weight. In an ideal world, we would have no unusable trim at the end of the shift.
A. What was the invoice price of this rib roast, in dollars and cents? ________

B. Total “shrinkage” is the loss of weight (juice) prior to and during the cooking process.

What is the shrinkage (loss of juice), expressed as a percentage, between invoice weight and salable weight? _________
C. What is the value of the rib roast after cooking (salable weight)?

Total Value_____________

Cost per Usable Ounce____________

D. What is the effective cost per ounce of rib based on the theoretical weight of the amount sold?

Theoretical Total Ounces Sold_____________

Effective Cost per Ounce Sold____________

E. The total weight of the product is not accounted for in the above list.
One possibility is that the cook over-portioned the rib.

How much product, in ounces, is unaccounted for? _____________

What is the effect on the overall food cost of the operation when over-portioning occurs?

What potential sales opportunity was missed assuming that over-portioning occurred?

Find the equilibrium price and quantity.

Follow these instructions for completing and submitting your assignment:

Place all answers, both numerical and written, in a single excel spreadsheet.

Place each problem into a separate tab or sheet in an Excel file.

Place labels on spreadsheet inputs and outputs, and use the yellow highlighter on the top menu bar to highlight your final answer.

  1. The demand curve is given by

QD = 500 − 5PX + 0.5I + 10PY − 2PZ

where

QD = quantity demanded of good X

PX = price of good X

I = consumer income, in thousands

PY = price of good Y

PZ = price of good Z

  1. Based on the demand curve above, is X a normal or an inferior good?
  2. Based on the demand curve above, what is the relationship between good X and good Y?
  3. Based on the demand curve above, what is the relationship between good X and good Z?
  4. What is the equation of the demand curve if consumer incomes are $30,000, the price of

good Y is $10, and the price of good Z is $20?

  1. Graph the demand curve that you found in (d), showing intercepts and slope.
  2. If the price of good X is $15, what is the quantity demanded? Show this point on your demand

curve.

  1. Graph the supply and demand curves.
  2. Find the equilibrium price and quantity.
  3. If the current price of the product is $100, what is the quantity supplied and the quantity

demanded? How would you describe this situation, and what would you expect to happen in

this market?

  1. If the current price of the product is $150, what is the quantity supplied and the quantity

demanded? How would you describe this situation, and what would you expect to happen in

this market?

  1. Suppose that demand changes to QD = 600 – 2P.

Find the new equilibrium price and quantity,

and show this on your graph.

  1. For each of the following cases, calculate the arc price elasticity of demand, and state whether demand is elastic, inelastic, or unit elastic.
  2. When the price of milk increases from $2.25 to $2.50 per gallon, the quantity demanded falls

from 100 gallons to 90 gallons.

  1. When the price of paperback books falls from $7.00 to $6.50, the quantity demanded rises

from 100 to 150.

  1. When the rent on apartments rises from $500 to $550, the quantity demanded decreases from 1,000 to 950.
  2. For each of the following cases, what is the expected impact on the total revenue of the firm?

Explain your reasoning.

  1. Price elasticity of demand is known to be –0.5, and the firm raises price by 10 percent.
  2. Price elasticity of demand is known to be –2.5, and the firm lowers price by 5 percent.
  3. Price elasticity of demand is known to be –1.0, and the firm raises price by 1 percent.

  1. Price elasticity of demand is known to be 0, and the firm raises price by 50 percent.
