One aspect of geography that often gets overlooked is the impact it has on the food you eat. With today’s import and export of food from all over the world, in most urban areas you can expect a wide range of exotic fruits, grains, and spices to be available to add to your culinary adventures. You can make Thai food one day and jambalaya the next, and seldom worry about where to find all the ingredients.
But in the past, people based their cuisine on the foods they could produce or harvest locally. If you lived near the ocean, you would eat more seafood. If you lived in warm climates, you had an abundance of fruits and vegetables. If you lived in a colder climate with a very short growing season, you had a short harvest time, so you might pickle and preserve your foods to last through the winter. In this Discussion, you will think about and explain the influence different cultures had on local foods during a time when many cultures were converging in Middle and South America, and the impact that time period had on the foods of today.
To prepare for this Discussion:
• Review the image titled “The Atlantic Slave Trade” found on page 236 of The World Today.
• Read the Culture and Entertainment: Caribbean article from the Walden Library and the Columbian Exchange website.
• Locate and read an article on African food, or review the African food website located under the Learning Resources.
• Locate a South American or Latin American recipe that incorporates the traditional foods of the region and the non-native foods brought over from other cultures that impacted the area. If you do not have a favorite regional recipe already, you can choose one from the recipe website located in the Learning Resources area.
Consider the impact the slave trade and the Columbian Exchange had on the foods of Middle and South America. To assist your analysis, use the Caribbean Food Sources Word document located in the Learning Resources.
• Reflect on how you have experienced some of these new food combinations in your own culinary experience.
• Read the Discussion Spark topic, question, or comment posted by your Instructor in the Discussion thread on Day 1
With these thoughts in mind, respond to the Discussion Spark post by Day 3 with the following:
• Your recipe and an analysis of the culture from which each ingredient originated. Do the cooking methods for these ingredients come from the same cultures or different cultures?
• Using Google My Maps, create a map that shows where the food came from and why it is culturally and historically relevant. Share the link to this map in your post.
• Be sure to support your ideas by connecting them to the week’s Learning Resources or something you have read, heard, seen, or experienced.
